What's on the menu for everyone today??

Found a container of C@H's Ropa Vieja stew in the freezer and2 Sweet potatoes in the pantry for the Spicy Sweet Potatoes - all set. We love this dish!

Making a roasted chicken and will throw some stock and root veggies into the roasting pan to make some gravy. Mashed potatoes and salad OR carrots on the side.

I finally found a place to get normal sized chickens (3.5'ish lbs) instead of those 5-6 pound monstrosities. The latino market. Those big chickens freak me out and we never wind up eating all of it.

Pork medallions smothered in Fontina with a white wine cucumber sauce....summer squash as a side although not needed.

Trixxee---I would KILL for a chicken that size---we have the 3 pounders only and there is not enough meat on them for leftovers

No, this is just chicken boiled, remove, add some of the chicken back in, add pastry sheets, and cook until tender. The chicken pot pie recipe I use has two pie crusts...one on bottom and one over the top.
