But the rest of the dinner is up in the air. I have yet to use my little gordito press I picked up on the road, so they will probably be on the menu also. Maybe enchiladas, most likely tacos (grilled chicken with guacamole, or perhaps grilled salmon with a cabbage- tomatillo-avocado slaw...). I bought dried corn husks last month and hope to try tamales at some point, but they're a bit intimidating... But it has been a long, long time. I’ve decided to go the easy way for Cinco de Meyo tomorrow – Margaritas and Mexican pizza. But, we will have a dessert – flan! Love it.
