cheeseburger soup - mjkcooking - 11-30-2012

I am losing my little mind - have looked on on line index and in the Search but can locate this recipe - did anyone try it? Its raining up here and thought it would be a nice supper. Thanks

Yes and we love it, too. did you find the recipe?? It's not in the magazine, I don't think - it's in one of the soup/stew editions.

Here you go Marye, just in case you didn't find it. The presentation is cute. It's served in a small bowl (more like a cup) with a handful of french fries standing up in it.

Cheeseburger Soup

1 lb. ground sirloin
1 cup onion, diced
¾ cup celery, diced
1 t. garlic, minced
3 cups chicken broth
2 cups russet potatoes, peeled, diced
1 t. dried basil
3 T. unsalted butter
¼ cup all-purpose flour
1½ cups whole milk
2 cups Cheddar cheese, grated
¼ cup ketchup
2 T. prepared yellow mustard
salt and pepper to taste
Shoestring Fries and chopped dill pickles

1. Brown beef in 1 T. butter in a large pot over medium heat. Cook until the meat begins to brown, then add theh onion, celery, carrot, and garlic. Saute about 10 minutes.

2. Stir in the broth, potatoes, and basil; bring to a boil, reduce heat, and simmer 10-12 minutes, or until potatoes are cooked through.

3. Melt 3 T. butter in a saucepan over medium heat. Whisk in flour and cook 1-2 minutes, then add the milk, whisking until smooth, scraping the bottom of the pan. Add the milk mixture to the soup and bring to a boil. Reduce heat to a simmer.

4. Add cheese, ketchup, mustard, salt and pepper, stirring until the cheese is melted. Service with fries and chopped pickles.

Servings: 8

Chopped Salad

This is the add-on side dish for Cheeseburger Soup

For the "Special Sauce" Dressing:
¼ cup white wine vinegar
¼ cup olive oil
¼ cup mayo
2 T. ketchup
1 T. sweet pickle relish
1 t. prepared horseradish
salt and pepper, to taste
For the Salad:
4 cups romaine or iceberg lettuce, chopped
1½ cups tomatoes, chopped
½ cup onion, sliced
prepared dressing

1. Whisk all ingredients for the dressing together and set aside.

2. Toss lettuce, tomatoes, and onion together, then drizzle with dressing. (Leftover dressing may be refrigerated for up to 1 week.

Yield: 6 cups salad, 1 cup dressing

It was in the soups book (1st I think) and in the slow cooker book (1st I think). It is really good. I have made both versions. The kids love it.

I thought I'd add my review. William wanted this for tonight, so the Tarragon Mushroom Chicken dish will wait for Thursday.

This soup is outstanding! I will definitely make this again, and I don't even like cheeseburgers! The Special Sauce for the salad, on the other hand, was a bomb. I'll stick to regular Thousand Island next time.
