Bread proofing baskets - Mare749 - 01-14-2012 Does anyone use a proofing basket when making the 18 hour bread? I know that sometimes, I just let it set on the board and throw a towel over it until baking time. Today, however, I decided to use a wicker basket and try it without the towel to get a pretty design. I dusted the basket heavily with flour and also sprinkled oats, before dropping the dough in for the 2 hour rise. It turned out so pretty, but my camera just isn't picking up the design to do it justice. P.S. Be sure to spray the basket with spray oil before dusting with flour. I'm thinking one of her Nantucket baskets would make an excellent proofing basket!
