Bearnaise - Gourmet_Mom - 12-27-2011 Is it at all possible to safely do Bearnaise by hand? Forgot my stick! Re: Bearnaise - losblanos1 - 12-27-2011 That would be up to Bearnaise. Does Bearnaise require a stick? Re: Bearnaise - Gourmet_Mom - 12-27-2011 I had planned to use the whisk attachment. Doing it by hand worked, just a little chunky. Re: Bearnaise - cjs - 12-27-2011 chunky as with the shallots and herbs??? I can't think what would be chunky.... but, it was tasty, huh? good. Re: Bearnaise - Lorraine - 12-28-2011 Years ago, I used to do it by hand. Now I use the Cuisinart. Glad it turned out! Re: Bearnaise - Gourmet_Mom - 12-28-2011 Sadly, it separated in the process of trying to keep it warm. shucks! I have had the worst luck. William told me I need to give up...LOL! Re: Bearnaise - Lorraine - 12-28-2011 Never give up! I keep mine warm in a container over barely simmering water. I even refrigerate the leftovers and heat it up the same way. I've never had a problem with it separating. Re: Bearnaise - Gourmet_Mom - 12-28-2011 I stupidly had my water too warm. By the time I realized, it was too late. Working in an unfamiliar kitchen is a pain! Re: Bearnaise - cjs - 12-28-2011 don't you dare give up!!!! We'll all come down on you! |
