Cis's Grapefruit Vinaigrette - cjs - 04-24-2011 This vinaigrette is so versatile, I just love it!! Thanks so much for it, Cis. I used it as a baste yesterday on chicken thighs - wonderful! -------- Cis’s Grapefruit Vinaigrette Another friend, Cynthia Farney, and another grapefruit inspired salad and equally delicious. 1/2 cup fresh squeezed grapefruit juice 2 T. sugar (I reduced this to 1 T.) 1 T. Rice wine vinegar 1 cup extra virgin olive oil Salt and black pepper to taste Combine the juice, sugar and vinegar; slowly drizzle and whisk the olive oil in until combined. A favorite of Cis’s is to serve this over salad greens with fresh strawberries and sprinkled with Gorgonzola or Feta cheese. Makes about 1 1/2 cups. ------ Anyone who hasn't tried it is missing a good one! I'll have to go back and make more notes on the recipe. edited to add - I forgot how much we enjoyed it on a Taco salad, also.
