NEW ISSUE! A REVIEW DINNER????? - cjs - 08-24-2010

No one has mentioned the newest issue - #83. Just rec'd it yesterday and I'm usually waaaaay down on the receiving of the new ones.

So, since it's been so long since we've had a Review Dinner - how about one from this issue before we all have time to make any of the recipes????

How about a review date a week farther out than normal to give all of us a chance to receive our copies?? Say - Monday, September 13th?

Quick Chicken Marengo
Lemon-Pepper Polenta

and I'm going for a dessert this time -
Cappuccino Doughnut Bars

I'll post the recipes as the next couple days go by... Sound Good?

I haven't received my new issue yet, but did receive Cuisine Lite and Fresh and Fab, so was going to suggest something from one of those for a dinner review. Your choice sounds good to me, Jean. I'll pick out something for the next one.

Sounds good.... I don't have the new issue yet, though. Noticed that there is a new cookbook - CAH Favorites. I'd guess it is a compliation of already published recipes.

Wouldn't it be nice if CAH would add the recipes in the cookbooks to the online searchable index??? hint, hint.

Life is Short....Eat Dessert First!!!


Cappuccino Doughnut Bars
Makes 24 bars

1 1/4 cups all-purpose flour
3/4 cup sugar
1/4 cup unsweetened cocoa powder
2 T. instant espresso powder
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. table salt
1/2 tsp, ground nutmeg
1/2 cup buttermilk
4 T. unsalted butter, melt
FOR THE CHEESECAKE LAYER-
2 pkgs. cream cheese, softened, (8oz. ea.)
1/2 cup sugar
2 eggs
1/4 cup coffee-flavored liqueur
(such as Kahlua)
1 cup chopped chocolate-covered coffee beans

Preheat oven to 350°F.

Lightly coat
a 9x13-inch baking dish with non-
stick spray.
Whisk together flour, 3/4 cup sugar,
cocoa, espresso powder, baking
powder, cinnamon, baking soda,
salt, and nutmeg for the doughnut
layer in a large bowl; set aside.
Combine buttermilk and butter
in a measuring cup; stir into flour
mixture until combined. Spread
mixture evenly into prepared pan.

Beat cream cheese and 1/2 cup
sugar for the cheesecake layer in
a bowl with a hand mixer on
medium speed until combined.

Add eggs and liqueur, beating
until smooth, 5 minutes; pour
over doughnut layer.

Bake cheesecake until set, about
25 minutes. Remove pan from
oven and let cool slightly. Sprinkle
chocolate-covered coffee beans
over cheesecake.
Refrigerate
dessert until cool, cut into squares,
and serve. Store any remaining
bars in the refrigerator.
