What's on everyone's menu??


I feel like a yo-yo - I've never been one to follow diet regimes, but I'm going for this one just for the h*ll of it. So, for the next three weeks, I'm trying the "Health, The CarbLovers Diet" ...we'll see. If nothing else, it should be interesting.

After seeing that picture of Vicci's souvlaki salad, that's what we're having. Perfect timing - today is our farmer's market day in town and they sell the best pitas I've ever had. Just need to pick up those, along with a cucumber and romaine. I have everything else on hand.

We're meeting friends at a local tavern that serves delicious burgers...so that's probably what I'll have.

O.K., mid-day dinner not bad - roasted salmon, and roasted new potato and a green salad.

tonight - 1/2 a chicken pita sandwich with red bells and Italian vinaigrette.

Snack, if we so choose - choice #1: "Nosh on 2 tsp. almond butter spread on 2 rye crispbread crackers"
or
choice #2: Black Beans & Chips: "Enjoy 2 T. black beans with 8 corn chips"

But, in the meantime this is what I'm making:
GORGONZOLA and BRIE TORTE

32 Ozs cream cheese, divided
16 Ozs butter, divided
8 Ozs brie, rind cut off*
8 Ozs gorgonzola cheese
1 bunch parsley, finely chopped
1 bunch scallions, finely chopped

Line an 8 inch springform pan with plastic wrap; set aside.
Beat half the cream cheese with half the butter and all of the brie; put in pan.
Layer with chopped herbs.

Beat remaining cream cheese with the remaining butter and gorgonzola.
Top with herbs.

Bring up sides of plastic wrap and wrap until ready to unmold.
Chill until ready to serve. Unmold onto a serving dish.

I'm only making 1/2-size torte and I'm not eating any of it - it's to take to the pizza makers' house tomorrow night, pizza time again.

Jean, your menu sounded pretty good until I got to the Gorgonzola and Brie Tart....I think I'd skip the healthy stuff and just pig out. Gorgonzola and Brie are two of my favorite cheeses! THAT recipe is now copied and saved.

Got that recipe copied, Jean! Probably won't get around to making it until a holiday but it sounds so good. Of course you'll review.

Of course

I don't know what I'll have, maybe leftover roasted veg pizza, leftover shrimp risotto, or leftover stewed beans on toasted Portuguese bread. I can hear the groans from here (he laughs at me) but it's really one of my favorite comfort foods.

For our dinner tonight, I have two leftover prosciutto wrapped tilapia from Tuesday that need to be eaten. Another nice recipe from the new CAH Lite books.
