This yum-worthy recipe was on the back of a package of dates that I bought today. Going to give it a try Wednesday or Thursday.

Ingredients:
- 1/2 cup Pitted dates, sliced
- 4 Skinless, boneless chicken breast halves, cooked and cooled
- 2 Large Oranges
- 1 Pineapple
- 2 Kiwi fruits
- Mint sprigs to garnish
- Remove peel and seeds from oranges.
- Slice oranges into 1/4-inch-thick rounds.
- Peel and quarter the pineapple.
- Slice pineapple into 1/2-inch-thick slices.
- Peel the kiwi fruits.
- Slice the kiwi fruits into 1/4-inch-thick slices.
- Arrange oranges, kiwi and pineapple on 4 salad plates.
- Meanwhile, tear chicken into strips.
- Toss the chicken and the dates with the Orange Mint Yogurt Dressing (recipe below).
- Divide the mixture into 4 portions arranged evenly on each serving plate.
- Garnish with mint sprigs.

- 2 Tbsp Honey
- 2 Tsp Orange peel, grated
- 1 1/2 Tsp Candied ginger, finely chopped
- 1/8 Tsp Salt
- 1 Dash Cayenne pepper
- 1 1/2 Tsp Fresh mint
- Whisk together all ingredients until well combined.
