Has this recipe been posted already? If not, please do so. I would love to try it.
One of our local stores has a great deal on pineapples right now: they have two of them wrapped together in one of those net-like bags, for $1.31! YUMMMMMMMMMMMMMMMMMMMMMMMM!
Of course, I'll make people even more jealous by saying that they are usually $1 each. There's just nothing like living where they're grown. :-)

Hawaiian Pork Stir-Fry

Mix together, whisk in:
2 tablespoons rice vinegar
2 teaspoons cornstarch
1 can pineapple juice (6 oz)
2 tablespoons brown sugar
1 tablespoon dry sherry
2 teaspoons chili garlic sauce
1/2 teaspoon kosher salt
Sear in 2 Tbsp. Vegetable oil
1/2 pound pork tenderloin
salt and pepper
Steam; Stir-Fry in 1 Tbsp Vegetable Oil
3 ounces green beans -- trimmed
1/2 cup water
1 tablespoon fresh ginger -- minced
1 tablespoon garlic -- minced
3/4 cup fresh pineapple -- cubed
3/4 cup red bell pepper -- seeded and chopped
3 scallions, biased sliced into 2 inch
pieces
Serve with
Pineapple boats -- optional
Cooked brown rice -- optional
Mix vinegar and cornstarch together in a bowl until lump free. Whisk in
pineapple juice, brown sugar, sherry, chili garlic sauce and salt; set
asaide.
Trim pork and cut into large chunks, season with salt and pepper.
Heat a large non-stick skillet over high. Sear pork in 2 T. oil until
richly browned and nearly cooked through, about 5 minutes. Remove from
pan and set aside.
Pour off any drippings, wipe pan with a paper towel and return to burner
over medium-high heat.
Steam green beans in water, covered for 3 minutes. Pour off any remainig
wate.
Add 1 tbsp oil, ginger and garlic; stir-fry until fragrant, about 15
seconds.
Add pineapple and sauce mixture, and simmer until slightly thickened, 2
minutes.
Stir in reserved pork and bell pepper and simmer until heated through, 2
minutes.
Add scallions and stir to coat.
Serve with brown rice in Pineapple boates.
For Pineapple Boats: To keep boats from rocking on plates, shave pieces
from opposite sides of pineapple. Cut fruit in half through fronds.
Lay on half on its flat side and use an anbled "V" cut to remove core with
a paring knife. Carefully pull out the core and discard.
Creat a cavity by cutting out pineapple chuncks on both sides lieaving a
1/2 - 1 " wide porder. Use this pinapple in the stir fry.
