COOK TIME: 20–30 MINUTES
COMBINE, WRAP IN FOIL, GRILL:
3 cups (about 2 bulbs)
fennel, large dice

red onion, cut into wedges
1/4 cup extra virgin olive oil
1 T. lemon juice
2 t. lemon zest, minced
1 t. garlic, minced
1 t. kosher salt
1/2 t. black pepper

And it is plated atop:

TOMATO-BUTTER SAUCE
(MAKES ABOUT 1 1/2 CUPS)
WORK TIME: 10 MINUTES
COOK TIME: 5–8 MINUTES
SIMMER IN 1/2 CUP UNSALTED
BUTTER:
2 cups tomatoes, seeded,
diced
