We loved this. The only thing I changed was that I marinated the chicken in the spices for a couple of hours before I cooked it. The guys loved it. I used an electric skillet. It was easy and tasty, a winning combination, for sure.

email? That sounded good, but maybe it's a Spanish (i.e. specifically from Spain) version, since it's nothing like any
arroz con pollo that my Cuban or Puerto Rican friends would make.

Jean, follow Rob's link and that's the one I used. You're right on, Rob, it is the Spanish version. The give-away is the green olives. I'm sure it can be easily doubled or tripled for a crowd.
