Hey, can anyone send me the recipe for the Sweet Red Pepper and Corn Bisque from Volume 40? I lent out my spiral bound copy of it and never got it back. Now I have no idea who has it and everyone denies it! ARGH! I have a bunch of peppers that need to be used up ASAP. Thanks!

here you go - oh, that was part of an article with my absolute favorite soups from C@H, Poblano Corn chowder!! Corn and Red Pepper Bisque (Cuisine at home, August 2003, Issue 40, p. 31) Makes: 8 Cups Total Time: 45 Minutes Rating: Easy For the Basil Crema— Blanch and Drain: 1 cup basil leaves Puree: Basil 1/2 cup half and half Add: 1 cup sour cream For the Corn and Red Pepper Bisque— Sweat in 3 T. Olive Oil; Puree: 2 lbs. red bell peppers, chopped (6 peppers) 2 cups yellow onion, chopped 1 cup carrot, diced 1 T. garlic, roughly chopped Add: 4 cups fresh corn kernels 3 cups low-sodium chicken broth 2 T. fresh lemon juice 2 t. kosher salt 1 t. sugar 1/4 t. cayenne Stir in: 1/2 cup half and half Garnish with: Basil Crema Fresh basil sprigs Related Recipes: Basil Crema Blanch and drain basil leaves for Basil Crema. Puree basil in a blender with half and half. Add sour cream; mix until smooth. Sweat peppers, onion, carrot, and garlic for Chowder, in a large pot over medium-low heat for 15 minutes. Puree in blender until smooth. Return to soup pot. Add corn, broth, lemon juice, and seasonings. Bring to a boil, reduce heat, and simmer 5 min. Stir in half and half. Simmer a few minutes to heat through. Garnish servings of soup with Basil Crema and basil sprigs.
