Does this ring a bell to anyone?
I'm pretty sure that the recipe was in an issue of CAH, but i fail to find it.
It's a simple tomato salad with a curry marinade.....delicious.
Does anyone have the recipe to spare?

Curried Chicken Salad with Mangoes and Cashews
(Cuisine at home, October 2005, Issue 53, p. 41)
Makes: About 3 Cups Total Time: 30 Minutes Rating: Easy
Combine:
1/3 cup mayonnaise
2 T. apricot preserves
1/2 t. curry powder
Juice of 1/2 a lime
Salt and cayenne to taste
Add and Toss:
2 cups cooked chicken, cubed
1 ripe mango, peeled, diced
1/2 cup celery, diced
1/4 cup scallions, sliced
1 T. chopped fresh cilantro
1/2 cup cashews, chopped
Combine mayonnaise, preserves, curry, lime juice, and seasonings in a large bowl.
Add chicken, mango, celery, scallions, and cilantro; toss to coat. Stir in cashews before serving salad with toasted pita bread or on a croissant.

Unfortunately, these recipes are not what i was looking for.
I'm devising my newest catering menu for my company, and tried the salad as a test. Unfortunately, i've misplaced the recipe and am hoping to find the source (to no avail). As i recall, the only ingredients are tomatoes and perhaps onion in a curry marinade. It was awsome.
I'm pretty sure that it was published in one of our canadian LCBO Food & Drink magazines within the last 2 years. Is anyone out there able to help?

Back to the top with this one!! It's a keeper! Used the last of Billy's Roasted Chix w/ginger for the salad - what a wonderful flavor that chicken was.
I'm sure becoming a curry fan lately and this salad was wonderful! It does need a nice dash of cayenne tho to perk it up.

this is getting real complicated...
Billy posted a salad in hopes it was what she was looking for, but it wasn't.
BUT, the salad Billy posted looked so good, I tried it and it's a keeper!! I just mentioned in passing in another thread how much we enjoyed it and someone wanted to know what salad I was referring to.
