Black Beans - How to keep their color

Any suggestions on how to help black beans keep their shiney black appearance when used in salad, salsa or soup? I use good quality, dried black beans in my recipies but most of the time the beans turn a dark reddish brown color after cooking. They taste fine but don't look as nice as those pictured in Cuisine's recipies or in some of the salads & salsas I have been served in restaurants.

Are you soaking them before you cook them?

About black beans, For beautiful truly black beans be sure you get turtle black beans, Yes, there are other black beans as Coco, but they don't retain the black color and firm texture when cooked. A source for turtle black beans is Bob's Red Mill

I have used beans from them to grow my own!
If you want them to be shiny, drain and toss with olive oil before using in the salad.

I cooked some yesterday in a cast iron dutch oven pot. Came out as black as you can get them. Yummy also!
