Erin, the menus look good! The two that interest me (and not only because we don't eat red meat!) are the planked chicken (I've wanted to do this for a couple of years now but need the "push") and sweet potato salad (I haven't yet found one of these that I like) and also the shrimp kebabs (love spicy grilled food) with broccoli slaw (another recipe I've seen but have not yet remembered to try).

Out of all of these items, though, if someone could please post the broccoli slaw recipe if this menu isn't chosen, I'd appreciate it.

Here ya go:

Broccoli Slaw
(Cuisine, August 2000, Issue 22, p. 31)

Makes: About 2 Cups Total Time: 10 Minutes Rating: Easy

Combine:
1/2 cup mayonnaise
1/2 cup red bell pepper, diced
1/2 cup scallions, sliced
1/4 cup minced fresh parsley
2 T. honey
2 T. fresh lemon juice
Salt, black pepper, and Tabasco to taste
Add and Toss:
3 cups broccoli slaw mix

Combine the mayonnaise, red bell pepper, scallions, parsley, honey, lemon juice, and seasonings in a mixing bowl.

Add the broccoli slaw and toss to coat. Chill until ready to serve. Serve slaw cold.
Don't wait too long to tell someone you love them.

"Cajun Kebabs (shrimp) with Broccoli Slaw and Grilled French Bread"

"Planked Cooked Chicken and Pineapple, Summer Sweet Potato Salad."

These are lookin' good to me - altho they all sound good and I don't think I've done any of them.

That burger...I've been drooling over that one.

Erin - choose! (please)

That burger and beans menu looks great, served with a side of the Sweet Potato Salad! Summer guests are starting to arrive, and this would be perfect.
Practice safe lunch. Use a condiment.

These are my votes:

Planked Cooked Chicken and Pineapple, Summer Sweet Potato Salad.
or
Asian Pork Tenderloin Served with Asian Noodle Salad
Gremolada and Yakitori sauce.

Could someone post the sweet potato salad if we don't make that menu, please?

They all sound good to me. I think my vote would be for either the Asian pork or the Cajun kabobs, but I'm willing to try what is decided. Erin, since you posted, you pick!

Billy, thank you!

But could someone tell me what makes up "broccoli slaw mix"? This particular combination hasn't yet arrived in our stores.

Really? It comes in a bag just like coleslaw mix. I am not sure what is in it - but if I see it at the store tomorrow I will look closer. I know it is mostly made up of Broccoli stems cut fine.
