Peppercorn Coriander Root Flavor Paste - Laura! - Harborwitch - 08-26-2009

As everyone's cilantro crop comes to the end of the season please take the time to pull it up by the roots and wash & save the roots it the freezer. Since I can't grow cilantro I buy it with the roots on whenever I can just so I can have this wonderful marinade.

2 teaspoons black peppercorns
5 to 6 large cloves of garlic, coarsely chopped (about 2tsp)
3 TBS coarsely chopped corriander roots
pinch of salt
1 tsp Thai fish sauce.

Place the peppercorns in a mortar with the garlic and pound to a paste. Add the corriander root and salt and pound to a paste. This will take 5 to 10 minutes. If you have a small blender or food processor you can use that instead. Stir in the fish sauce.

Store in a well sealed jar - 4 days, or freeze.

This is perfect on grilled chicken.

Great minds and all that, Sharon - just this season, I learned about keeping the roots when I freeze cilantro!! I'm on my 2nd crop and 2 smaller pots are planted to keep us going with fresh as long as possible.

The marinade sounds like a keeper!

Jean this stuff smells so good that it will drive the neighbors crazy while you're grilling.

Fascinating info, Sharon. Thanks for telling us about it.

In other words, Sharon, you're telling us all to go pound salt?

Seriously: this does sound wonderful - especially for someone who loves cilantro. I do still have some fish sauce in the fridge, so I'll have to try this.

Thanks!

Daphne, cilantro takes off so quickly, plant some seeds now - I'll bet you'll have some in no time.

Thanks for the tip. I'll see what I can find this weekend.

I have planted cilantro 3 times - nothing has come up! I guess it just something I can't grow. We're getting an Aerogarden for North Dakota - maybe I can grow some in that!
